JET’s Vivace demonstrates the potential that a Räuschling can hold. The grapes for this selection come from vines over 60 years old in our top vineyard at Grüt. These old vines naturally yield little fruit and reveal a more refined and complex character than younger vines. We allow the Vivace to undergo spontaneous fermentation directly in barriques. In doing so, we give the natural fermentation process plenty of time so that the aromas can develop into something even more beautiful and intriguing. The wood also lends a tart note. Like a great red wine, our Vivace invites you to explore and rediscover it. It evolves, plays with its aromas, and reveals itself to be multifaceted and complex. These venerable vines naturally yield very low harvests. The result is a profound expressiveness and a mineral complexity that younger vines can hardly match.
Winemaking – Time and Nature as Architects
With the Vivace, Jonas Ettlin breaks with conventional white wine norms. We treat this Räuschling with the reverence usually reserved for great red wines:
Barrique fermentation: The Vivace ferments directly in the barrique, which gives it a delicate, tart structure and exceptional aging potential.
Spontaneous fermentation: We give nature time to work its magic. Slow fermentation with wild yeasts allows for a rich and complex development of aromas.
Purism: Unfiltered and with minimal intervention, the full identity of the Uetikon soil is preserved.
