Our work in the cellar is the logical continuation of our vision in the vineyard. Here, the energy of the vines is transformed into liquid character. We do not see ourselves as correctors, but as attentive guardians of a natural process.

A JET is created through trust in natural processes. We only intervene when it protects quality, otherwise we let nature take the lead. This results in precise terroir wines that play, vibrate, and proudly bear their origins.
The expansion: structure through restraint
For us, wood is not a spice, but a tool for structure. We use barriques with meticulous precision—supporting, never dominating.

Spontaneous fermentation, wild yeasts, unfiltered. Pure expression.
We give the wine the space it needs to tell its own story—unadulterated and without pretense:
Wild yeasts & spontaneity: We rely exclusively on spontaneous fermentation with yeasts from our own vineyard. No cultured yeasts, no industrial constraints—each wine is a living, unique creation.
Renunciation as standard: we do not use any additives or fining agents. What you have in your glass is the pure essence of the grape.
Unfiltered truth: To preserve the full texture and entire spectrum of flavors, we naturally bottle our wines unfiltered. This is not a flaw, but rather the hallmark of a lively wine with maximum grip.

Grüt JET's prestigious location. Above Uetikon, at the foot of the Pfannenstiel, the vines are enthroned with a view over Lake Zurich. Wine history has been written here since 1402 – a tradition that we continue today with modern precision. Located at the foot of the Pfannenstiel, this prestigious location looks majestically out over Lake Zurich. The soil? Barren, rocky, unyielding. The mild lake climate provides balance, while the stony subsoil gives our Pinot Noirs, Sauvignon Blancs, and Räuschling a minerality that cannot be replicated.
The soil: barren, rocky, gently sloping toward the south. It forces the vines to grow deep roots.
The climate: Mild maritime climate meets cool downdrafts from the Pfannenstiel.
The grape varieties: Pinot Noir, Sauvignon Blanc, and the legendary Räuschling.

The wild enclave. Diversity in the village center.
In the heart of the old town of Uetikon lies the "Wigarten" – a paradise-like niche that proves that top-quality wine and biodiversity can coexist in perfect harmony. In this former orchard, reptiles and rare insects share the space with our vines. The nutrient-rich soil and sheltered sunny location provide the perfect microclimate for a Chardonnay and Sauvignon Blanc of vibrant freshness.

The vines: Sauvignon Blanc and Chardonnay with bright fruit.

The last relic. Lime & history.
The Äntschberg a rarity – it is the last remaining vineyard in Kloten. Surrounded by untouched forests and meadows, this cool south-facing slope gives our wines an almost Nordic elegance. The Äntschberg unique – the last remaining vineyard in Kloten. Where once vast hillsides were covered with vines, today this jewel stands out amid forests and orchards. The calcareous, barren soil and the venerable old vines challenge us every year. The result is Riesling-Sylvaner and Pinot Noirs that amaze with their cool elegance and surprising complexity.

The age: This is where our oldest vines grow, battling their way through the hard limestone.

A great wine always reflects its origins. Our vineyards in Uetikon and Kloten are not interchangeable plots of land, but monuments steeped in history. With individual vine care and rigorous yield reduction, we bring out the soul of each soil. Biodynamics is not a certificate here, but our tool of the trade. With nature as our partner, individual vine care, rigorous yield reduction, and strictly organic cultivation form the basis for our uncompromising terroir wines. To achieve this, we work personally in the vineyards throughout the year and oversee every aspect ourselves. We strive to improve our soils in a forward-looking way and to strengthen natural diversity – for our wines and for the future. Our Bio-Suisse certification is only the beginning.

A wine can only be as good as the soil in which it grows. Our vineyards in Uetikon and Kloten are not the result of chance. They are part of our historical heritage. From the barren, rocky Pfannenstiel in Grüt the cool limestone of Äntschberg we have the privilege of working with soils that have a story to tell.
Deep roots: Vines that struggle through barren rock develop more depth.
Biodynamics: We strengthen this origin through strictly organic cultivation. Healthy soil is a prerequisite for a genuine wine of origin.

In the vineyard, we are uncompromising quality fanatics – so that we can blindly trust the natural processes in the cellar.
