Le Fumé 2023 - Sauvignon Blanc, AOC Lake Zurich

Our Le Fumée is the crème de la crème when it comes to Sauvignon Blanc. It is a powerhouse in the glass, bursting with exotic aromas, which also gives it its name, meaning 'fragrant'. With Sauvignon, the vine has more energy available for aroma development with each harvest pass, which is why we harvest the grapes for Le Fumée last, when the berries have developed an enormous aromatic profile. We macerate the grapes and set them aside chilled for 48 hours to extract all flavour compounds before gently pressing the juice. The Sauvignon ferments spontaneously in stainless steel tanks and, after six months, is aged for an additional three to four months in used barriques. The result is a Sauvignon Blanc that breaks conventions. Le Fumée by JET is carried by its exotic fruit notes of grapefruit, bergamot, yuzu, and passion fruit, extending into a long finish. It is full-bodied, and the subtle oak notes provide structure: it is neither overly elegant nor clumsy. Le Fumée plays in a league of its own and is best enjoyed with delicious dishes such as Paella Valenciana.
