Chardonnay is a terroir sponge and reflects its origin in the glass like no other white wine. There is no point in trying to copy great terroirs. The weather, soil, climate, tradition in the vineyard, and the work of the winemaker cannot be denied in the glass. For this great white wine, we harvest only the best grapes from our large Wäck vineyard in Uetikon on Lake Zurich in several passes and vinify them in small batches à l'ancienne directly in wooden barrels. Every year, we select the yeasts directly from the vineyard to create an oenologically perfect wine. The Apego is aged for a year in barriques before being bottled unfiltered. It is refined, complex, and invites discovery and exploration. Although it matures for a year in wood, it has no strong wood influence and delights with aromas of Williams pear and a subtle smoky note from spontaneous fermentation. Its finish is mineral with a noble bitter note. Despite its Zurich origins, it pairs well with French cuisine.
